  • Varietal: Pink Bourbon, a unique mutation of Bourbon notable for its delicate pink cherries

  • Process: Anaerobic fermentation (approximately 3 days), followed by a Thermal Shock washed method. Cherries are anaerobically fermented for about three days to develop bright, complex flavors, then undergo hot and cold washing to induce thermal shock, enhancing aromatic clarity and vibrancy.

  • Altitude: Approximately 1,700 meters above sea level

  • The farm is situated in a high-altitude cloud forest zone in the Andes, with volcanic clay soils rich in organic matter—ideal conditions for sensitive and exotic coffee varieties.
